Monster Pancakes

In my book, the best part of the weekend is brunch. I started experimenting with pancakes recently. I purchased some whole wheat buttermilk pancake mix from Whole Foods and got to work. I've tried banana nut, apple and the classic double chocolate chip. My favorite is a combination of all the above. I call it the monster pancake.



I actually have a recipe for this one. Ready?

1 cup whole wheat buttermilk pancake mix
3/4 cup water
1 tbsp oil
1/2 cup or 1 pkg applesauce
1 ripe banana, smashed
2 tbsp almond butter or peanut butter
handful of chocolate chips

Combine all together and make your pancakes! Random notes- don't overstir. Also, if you eat eggs, go ahead an crack an egg into the batter. However, its really not necessary. They fluff up perfectly without the egg.

The batter can be kept in the fridge for 3-4 days. So, you can definitely have these on the weekdays too.
