It's an easy pairing of tomatoes, garlic, onions, olive oil and italian spices. You really can't go wrong. I roast everything in one pan in the oven and give the onions a 5 minute head start. Once they soften, I add the tomatoes (cut into strips and de-seeded). After everything becomes soft and fragrant, I add some minced garlic, a handful of fresh herbs and cubed mozzarella (optional, of course). This "bruschetta" is served on some toasted French bread and it is perfection.

Tomatoes and Onions
Tomatoes and onions are staples in my kitchen. I use them in almost everything...well, except cakes. But, one of my favorite recipes for tomatoes and onions is a roasted tomato and caramelized onion bruschetta.
