Lasagna Rolls

My spinach was about to go bad so I decided to throw together a few quick lasagna rolls. I sauteed some onions, garlic, spinach and mushrooms with a mix of herbs and a pinch of red pepper flakes. Instead of using ricotta, which I find kinda heavy, I used tofu. It sounds a little weird, maybe even disgusting, but you won't be able to tell the difference. Just puree the tofu with a clove of garlic and stream in olive oil until you get your desired consistency. Overall, its an easy, balanced and delicious meal.
