Banana Bread

I spent the entire day today waiting around for the AT&T service guy to show up. I planned on being super productive and getting a lot done while having an excuse to not leave the house. Well, I did next to nothing and then to top it all off, he never showed. To soothe myself, I decided to make a loaf of banana bread. Its been ages since I made banana bread and I have never made a vegan version. But, I had three very ripe bananas and a gloomy outlook. It was perfect timing.



Banana Bread with Chocolate Chips and Walnuts

3 ripe bananas
1/2 cup applesauce
1/4 cup canola oil
1/2 cup agave nectar
2 cups whole wheat flour
3/4 tsp baking soda
1/2 tsp nutmeg
1/2 tsp cinnamon
pinch of salt
1/2 cup chopped walnuts
1/2 cup chocolate chips

1. Preheat oven to 325 degrees.

2. Mash bananas and combine with applesauce, oil and agave nectar.

3. Combine flour, baking soda, nutmeg and cinnamon. Sift into the banana mixture and stir to combine.

4. Add in chopped walnuts and chocolate chips and stir.

5. Pour into a greased loaf pan and bake for 40-50 mins or until knife/toothpick removes cleanly.

I thought it was weird that the recipe never called for vanilla. I would have added some if I realized it before sticking it in the oven. Nonetheless, the banana bread totally hit the spot. I like mine with a little butter (Earth Balance, of course). So delicious. Enjoy!
