Baked Apples



I tend to buy my apples from Costco because you can get a dozen organic apples for about $7. However, sometimes those apples can get a little boring. So, I decided to bake them up. The added bonus? It fills the entire kitchen with the sweet smell of fall. Can't beat that, right?

4 medium apples, peeled and chopped
1/2 cup almond milk or apple cider
1/2 cup agave or maple syrup
1/2 cup oatmeal
1/2 cup chopped walnuts (optional)
1 tsp cinnamon
1/2 tsp nutmeg

Topping:
handful of oatmeal
handful of walnuts
a few tbsp of agave or maple syrup

1. Combine almond milk/cider, agave/maple syrup, oatmeal, walnuts, cinnamon and nutmeg.

2. Add in chopped apples and combine to coat.

3. Line a baking pan with foil and add the apples. Cover with foil and bake in 350 degree oven for 20 to 30 mins until apples are soft. (Timing depends on how big your apple pieces are.)

4. While your apples are in the oven, combine topping ingredients and toast in a pan. Keep an eye on this mixture, the oatmeal can go from toasted to burned in seconds. Top your baked apples once they come out of the oven.

This mixture is really great by itself but its also great as a topping for oatmeal or ice cream...especially ice cream. It tastes like homemade apple pie a la mode but with much less work!
