Hiatus and Carrot Apple Salad

For the past week and a half I have had some friendly visitors in my apartment...mice! I was scared of my kitchen for a while and now am slowly getting over it. My mice problem came at the worst possible time though-- finals season. It's been a challenging two weeks. I wrap up finals on the 9th and intend to scrub down my kitchen and work my cooking muscle for a few days before I head home to Austin.

In the meantime, I want to leave you with a recipe for a simple salad. It's refreshing and incredibly easy...especially if you have a food processor with a grater plate.


Simply wash and peel 3-4 large carrots. Grate in your food processor with a green apple. Dress with fresh lemon juice, salt and freshly ground black pepper. The longer this mixture sits, the more flavorful it is. It's a great side dish and a perfect snack.

My first memory of this salad was from my childhood. My mom used to make a version of this salad in the summers. She would slice the carrots into disks on a handheld mandoline and squeeze a lemon on it. I loved eating this with my hands while watching an episode of Barney or Mr. Roger's. Good times.
